Mango Apple Bircher Muesli

You make Bircher Muesli by soaking oats overnight in milk or water so that by the morning they are soft to eat, easier to digest and all the goodness they contain is more easily absorbed by your hard working body. It is a way of boosting the nutritional value of your meal with almost no extra effort on your part!

Ingredients: Serves 2

2 cups of chopped mango
1 apple
1 cup of oats
1 cup of almond milk
1 tbsp of flax seeds
1 tbsp of hazelnuts
1 tbsp of lucuma powder

Method:

Grate the apple and mix it with the oats, flax seeds, lucuma and almond milk. You can either leave this to soak overnight, and in the morning layer the oat mixture with the chopped mango into two jam jars, or layer it straight away and let it soak up all the goodness ready in the jars. Either way, top it with chopped hazelnut for a delicious crunchy finish.
