Summer Gazpacho with Tribe Fire Seeds

This is the perfect option if you just want a light meal on hot summers day. Lots of people don’t like to eat a huge amount before exercise, so soup is a great idea for lunch if you plan to go running in the afternoon.

Ingredients

  • 5 tomatoes
  • 1 red pepper

  • ½ a large cucumber
  • 1 clove garlic

  • 1 small shallot
  • 1 tbsp olive oil

  • Pinch of dried chilli
  • Squeeze of lemon

  • Salt and pepper (to taste)
  • Water
  • 1 pod Fire Seeds

Method:
1. Chop all the vegetables and put aside a few pieces of cucumber and pepper for garnish and a bit of crunch. 2. Blend all the ingredients (minus seeds), adding water until you reach your desired consistency. Chill in the fridge before serving.
3. Serve topped with the chopped cucumber, pepper, Seeds and a drizzle of olive oil.
