Baobab Buckwheat Granola with Tribe Sahara Trail Mix

Find some time to whip up a quick batch of this over the weekend and you’ve got a quick and healthy breakfast for the week ahead. This nutritious granola tastes great with greek yoghurt and berries or sprinkled over your favourite smoothie for some extra sustenance before a long run, plus it contains none of the nasty additives you’ll find in many shop bought versions.

Ingredients

1 cup oats
1 cup buckwheat
4 tbsp coconut oil
4 tbsp honey
Tribe Sahara Trail Mix (1 pod)
Tribe Baobab (1 pod)
Chia seeds/pumpkin seeds/goji berries/sesame seeds/raisins (optional)

Steps

Preheat the oven to 180ºC.
Melt the coconut oil over a low heat until liquid and mix well with the honey. Place oats, buckwheat, baobab and any chia/pumpkin/sesame seeds you are using into a large mixing bowl. Stir the honey and coconut oil and mix well until all ingredients are evenly coated.
Grease a baking tray with a little bit of coconut oil and spread on the granola mix. Bake for 15 minutes, then remove the tray from the oven, stir the granola and return it to the oven.
Overall the granola will need about 40 minutes, but it will need to be mixed every 10 minutes or so to ensure it doesn’t burn.
When the granola is golden brown, remove it from the oven and allow it to cool before mixing in the Sahara Trail Mix and any raisins or dried fruit you want to add. Store cooled granola in an airtight container.
