Almond milk porridge with roasted apricots & homemade granola

Ingredients:
Porridge
- 220g Rude Health Daily Oats
- boiling water
- 300ml Rude Health Almond Drink
- 1 pack apricots fresh or ready to eat dried
- 1 vanilla stick
- 1 fresh nutmeg
- honey
Granola
- 1 cup oats
- ½ cup seeds
- ½ cup raw almonds
- ½ tsp vanilla extract
- ½ egg white
- 1/3 cup coconut oil
- 1/3 cup honey
Method:
Porridge: combine the oats with the almond drink and water, then add a touch of grated nutmeg and stir over the heat until thick.
Granola: mix the dry ingredients together. Combine with the wet ingredients. Stir and bake on a roasting tin at 180 degrees Celsius for 20 mins. Allow to cool and keep in air tight jar until needed.
Apricot: cut the dried apricots and put in a pan with the fresh vanilla pod and a little water. Heat until reduced & sticky.
Layer the almond porridge, then apricots and finally granola on top.
