A good Matcha drink needs a lot of whisking – whether you are making it with water, coconut milk or whatever. It can get very lumpy if not. All in all, however, it makes one of the world’s best warm pick-me-ups and does a whole lot of goodness for the body at the same time.
Ingredients: (Serves 1)
235ml (1 cup) of unsweetened coconut milk
½ teaspoon of Matcha powder
Pinch of allspice or cinnamon
Honey to taste (if required)
Heat the coconut milk in a pan over a gentle heat until it comes to the boil.
Place the Matcha powder in a cup and add around 1 tablespoon of the hot milk to the cup and make a paste. Once the lumps are all gone, add the remaining milk and stir through the paste.
Sprinkle the allspice or cinnamon over the top and sweeten with a little drizzle of honey if you like.
