An energising and wholesome snack – perfect as a pick me up after exercise or a long afternoon in the office.
Ingredients: (Makes 10-12)
400g chickpeas
2 tbsp peanut butter
1 tsp vanilla essence
1 tbsp and 1 tsp coconut oil, melted
½ cup 100% pure maple syrup
Tribe Baobab pod
½ cup mixed chopped nuts
Pinch of salt
Method:
Blend chickpeas, peanut butter, maple syrup, coconut oil, vanilla, coconut oil, baobab and salt until smooth. Transfer to a mixing bowl and stir in the nuts. Roll the mixture into bite size cookie dough balls. Store in the fridge in an airtight container for up to 5 days.
